Coffee cake is notoriously filled with fat and calories. Even Starbuck’s reduced fat coffee cakes are 340+ calories a piece.

My recipe is 137 calories a piece.

As always, use your own preferred butter and sugar substitutes and egg whites in place of apple sauce if you wish.

1/8 cup packed brown sugar
1/4 +1/8 cup splenda
2 teaspoon molasses
1/8 cup chopped nuts, optional (I used almonds but pecans and walnuts work well too)
2 teaspoons ground cinnamon

1/2 cup sugar
1/2 cup splenda
1/4 cup butter substitute
2 tablespoons apple sauce
1 cup nonfat greek yogurt
1 teaspoon vanilla extract
1 3/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 350°.  Grease an 8 inch pan.
Combine surgar, splenda, molasses, cinnamon and nuts together till well mixed and crumbly. Set aside.

Beat sugar, splenda and butter substitute in a mixer. Add apple sauce, yogurt and vanilla.  Next, mix in baking soda, baking powder, and salt. slowly add in the flour till smooth.

Pour half of the batter into the pan. Cover with half of the streusel mix. Cover with remaining batter and remaining streusel. Bake for 45min or till a toothpick comes out clean. Cool in pan on a rack.

Substitution Lesson – EGGS!!

1tbsp apple sauce = 1 egg white
2tbsp. apple sauce = one whole egg

2 egg whites = one whole egg
3tbsp. egg substitute = one whole egg

One whole egg is 72 calories
One egg yolk is 55 calories
One egg white is 17 calories

One tablespoon on Trader Joe’s Unsweetened Applesauce is 6 calories.
