Why is it called “pumpkin yummy”? Because I don’t know what else to call it. It’s a great desert on it’s own, makes a wonderful pie filling, makes an excellent topping on pancakes, waffles, crepes, etc. It’s so versatile! And only 14 calories a tablespoon.
1 small can pumpkin puree
1 cup nonfat greek yogurt
1 small package of nonfat sugarfree vanilla pudding mix
1 teaspoon vanilla
1 teaspoon splenda
Mix all of your ingredients together in a bowl and chill for 2 hours. That’s it. EASY!!
I took my mix and made turn-overs. I got lazy though and used Trader Joes pie crust. Eat turnover is 4inc. long and about 70cal. There is one tablespoon of the pumpkin yummy in each one.
So there you go. A quick and easy snack/desert that is tasty and won’t kill your diet. Enjoy!
