This recipe makes a wonderfully flavorful loaf that can be eaten by itself, with fig butter, goat cheese, and or fresh blueberries. Each serving is roughly 150 calories the way I bake it.

1 cup sugar substitute (like splenda)
1/2 cup sugar
1/2 cup brown sugar
1/8 teaspoon molasses
2 egg whites (or an equivalent amount of egg white substitute)
2 tablespoons unsweetened apple sauce
1 15oz can pumpkin puree
1/2 cup well brewed chai tea
1 teaspoon cinnamon
1 teaspoon garam masala
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon vanilla extract
3 cups flour

1011142233bPreheat oven to 350 degrees F and grease you loaf pans or use a liner.
Cream together the butter substitute, eggs, apple sauce and sugars till they are well blended. Then add the next seven ingredients. Slowly add in your flour (do not dump all at once) till the batter is smooth and thick. Poor into your loaf pan/s and bake for 50min. Do the toothpick test to make sure. Cool in the pans on a wire rack. Serve warm after 15min. Otherwise, cool to room temperature and store in an air tight container. Makes 24 servings.
