I made these during the holidays and they went over very well.

2 3/4 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 + 1/8 c sugar
3/4 + 1/8 c sugar substitute like Splenda
2 1/2 tsp cinnamon
1 tsp grnd ginger
1 tsp cardamom
1/2 tsp allspice
1/4 tsp ground black pepper
1 c butter substitute, softened
2 egg whites or 3Tbsp. egg substitute
1/2 tsp vanilla extract

Preheat oven to 350 degrees.

1211141841bIn a medium bowl combine sugar and spices. Put 1/4 cup of the sugar-spice mixture in a small bowl for later. You’ll be rolling your cookies in this.

Using a mixer, cream the butter and sugar-spice mixture until well blended. Add egg and vanilla extract. put in the baking soda and poweder. Last, slowly poor in the flour until everything is combined. Using a small scoop (2 teaspoons or so size) to make each dough ball. Roll dough into balls into the reserved sugar-spice mixture. Place dough balls on a baking sheet about 1 1/2 inches apart.

Bake in preheated oven for 8 to 10 minutes. Let stand on baking sheet two minutes before removing to cool on wire racks.
