I rediscovered this awesome stuff in the jams and peanut butter section of the store. It’s PB2 powder and I had forgotten how awesome this stuff is. For those who don’t know, it’s powdered peanuts with the oil drained out of it, so there is no fat. Where ordinary peanut butter is 180-200 calories for two tablespoons, this stuff is 40. Lends itself to making awesome cookies, and I whipped up a batch for this weekend’s Long Beach Comic Con.
1/4 c sugar
cookie11/2 c packed brown sugar
1/4 c splenda
1/4 cup butter substitute
3 tbsp. egg white or substitute
1 tsp. vanilla
3 tbsp. PB2
1tbsp. milk (optional)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 c flour
2 cups regular oats
Preheat the oven for 375deg. Grease your cookie sheet or use parchment paper.
Cream sugars with the butter substitute. I like using the “light” butter mixed with canola oil for cookies. then add egg and vanilla. Add in the PB2 Peanut Butter Powder one tablespoon at a time. If it looks too thick, add the tablespoon or so of milk.  Add in the baking powder, soda and salt. Next, slowly poor in the flour. Don’t forget to scrape the sides of the bowl to make sure everything mixes. Then, add in the oats.
Portion out on your cookie sheet in tablespoon sizes about an inch appart. They don’t spread very far so you can get a lot on one sheet. Bake for 10min. when you pull them out, let them sit on the pan two to five minutes before placing on a wire rack to cool. Makes 3-4 dozen that are about 50cal. each.
